Fried Green Tomatoes

We have been loving our little raised garden in the back yard. To date, one of Juston's favorite things has been my fried green tomatoes and they couldn't be easier to make, so I thought I'd share the recipe.  All you need is a green tomato, corn meal, salt, pepper and some frying oil (I used vegetable oil). 

Step one: Slice tomato to desired thickness. I like mine medium thickness. I think they stay a little too tough if they're sliced thick and I just don't care for them when they're sliced thin. 

Step two: Salt both sides of your tomato slices and lay on a plate or platter for about five minutes. This draws out the moisture so the batter will stick.

Step three: Mix cornmeal and fresh ground pepper in a medium sized bowl. I use about 1/4 cup cornmeal (you can substitute all purpose flour for cornmeal) and 1 tsp of pepper per tomato.

Step four: Dredge both sides of tomato through corn meal mixture.

Step five: Heat up enough oil to cover the bottom of your skillet. How much you use will depend on the size of your skillet and how many tomatoes you are frying up. 

Step six: Drain tomatoes on paper towel and lightly salt while hot. You don't have to do this step, but I think it makes a huge difference. 

Tonight when I made these, I used a mixture of cornmeal and flour just to experiment and I didn't care as much for it as when I do just the cornmeal. Just an FYI :)
