What's Cooking: Goulash

A lot of the food I like and make may not be the prettiest thing to look at, but boy does it taste delicious. I feel like that may be a pretty common Southern food thing. Casseroles may look odd, but be one of the best things you ever put in your mouth. This week, Juston was out of town for work, so I made Caroline and myself Goulash, a prime example of not so pretty, but oh-so-tasty. Caroline loves it as much as her mama and it's a great dish to make ahead and have on hand. If you've never had it, goulash is basically like homemade Hamburger Helper. 

The recipe I use is from the Deen Brother's Cookbook, "Y'all Come Eat". I sweat, it's one of the best cookbooks I have. I've never made anything from it that didn't turn out to be a huge hit. Mine's not exactly what the original recipe calls for, but differs just a tad. 

In a large pot, drizzle about two tablespoons of olive oil and brown a package of lean ground beef. While the beef is browning, dice a medium onion and add it to the pan once the beef is cooked through. Cook for about five minutes. Then add the following:

3 tbsp minced garlic
2 15 ounce cans of diced tomatoes
1 28 ounce can tomato sauce
3 tbsp lite soy sauce
1 tsp garlic powder
2 tsp dried basil
2 tsp dried oregano
dash of salt and pepper to taste

Simmer this in the pot with the lid on for twenty minutes, then add two cups of uncooked Veggie macaroni noodles. Cook for twenty more minutes. Turn off stove, but leave goulash in pan for another fifteen to twenty minutes to cool then serve with shredded cheddar cheese on top.
