Cheesy Corn Dip

There are few things I enjoy more than spending time in the kitchen putting together appetizers, then spending the next few hours curled up on the couch watching SEC football with my family. Okay, I curl up, Juston sits on the edge of his seat and the kids run around like crazy people, but it's still one of the things I look most forward to in the fall. I thought I'd start sharing some of our favorite gameday eats here, starting with a cheesy corn dip I made this past weekend. 

Here it is before I put it in the over.

It's super easy and super tasty!


4 ounces softened cream cheese
4 ounces sour cream
2 cans drained corn
1 can drained green chiles
1 tbsp garlic powder
1/2 cup pepper jack cheese
3/4 cup monteray jack cheese

Mix the softened cream cheese and sour cream together then sprinkle in the garlic powder. If you want to taste a little bit of heat, you could even add a dash of cayenne pepper. Next, use a spatula to fold in the corn, chilies and Monterrey jack and pepper jack cheeses. Once all of that is incorporated, sprinkle to top with more monterrey jack and pepper jack cheeses. Bake at 350 degrees for about twenty minutes or until the cheese is melted and bubbling. I served with whole wheat tortilla scoops. The whole wheat and corn makes the dip healthier  ;)

Another quick meal I wanted to share that I made last week is this peach arugula salad. Make a bed of arugula, then add peeled, diced peaches, Gorgonzola cheese and crumbled bacon. Drizzle with olive oil and balsamic vinegar.

 I'm a little late sharing about our Labor Day weekend, but we unofficially ended summer much like we spent the majority of it; on the boat and at the camper with the family.

It was just Caroline and myself that went out on the boat with my sister and her family. Juston doesn't like boating much and it was Carter's naptime so the boys stayed home to relax.  

Caroline and Camden, my sister's youngest have the same age difference as my sister and myself and they have just had the greatest time with each other all summer. Our kids may be very spread out in age with her oldest being 17 and my youngest just 1, but they are all so close. It's far and away the thing I am going to miss the most when we move is seeing them all play together and occasionally drive each other nuts just like siblings, because they basically are that close anyway.

The camper is probably one of my kids favorite things to do! They love running free, making s'mores, being outside, watching all the people and dogs walking around. It's such a relaxing atmosphere. I love that it's the same campground my papaw used to camp at every summer for years. 

The kids and I have some fun plans for tomorrow, weather permitting. I'll be sure to share if we end up getting to follow through!
