Quick and Simple Vegetable Soup

With as much as we've been running around lately, I have been all about cooking easy meals...and the faster, the better. Earlier this week, I made my mom's recipe for vegetable soup and it is so simple and ready in about thirty minutes or less. Doesn't get much better than that!



You'll need the following ingredients:

1 large can of tomato juice, 46 ounces ( I usually find the size needed where they sell ingredients for mixed drinks and juices) 
1 package diced beef
2-3 tbsp olive oil
1/2 bag frozen corn
1/2 bag frozen green beans
1/2 bag of frozen carrots and peas
1/4 bag frozen okra
1/4 bag frozen butter beans
1/2 onion, diced
2 yukon gold potatoes diced (you can peel them first, but I usually don't)


In a large pot, heat up the olive oil, then add the beef and onions, cooking the beef all the way through. Once the beef is cooked, add the whole can of tomato juice, followed by the rest of the ingredients and simmer for 20-30 minutes. That's it. It may be easy but it's SO good!
