Rotel Dip

This Rotel Dip is always a hit anytime it's made for a gathering. My sister got this recipe from her sister-in-law and shared it with me. Juston and I always love what we call "ballgame food" when we watch the National Championship game every year, so I put together a few appetizers and this was one of them. I did it a little bit different than what my sister does since I don't have a small crockpot, but you can prepare it either way and it's delicious. All you need are the three ingredients pictured below.


You can obviously use any kind of sausage you'd prefer and do the full fat cream cheese if you'd rather, but that's all you need: 

1 package of sausage
1 brick of cream cheese
1 (drained) can of rotel

Directions:

Brown the sausage in a skillet over medium heat until it's cooked completely through. Drain the sausage grease, then cut the cream cheese into cubes and add it to the skillet. Once that melts completely, add in the Rotel and heat through. Pour into a baking dish and serve with tortilla chips. 

Now, if you'd rather, my sister usually does it a bit different, so here's your other option. Brown the sausage in a skillet over medium heat until cooked through. Drain the grease, then pour the cooked sausage into a small crockpot. Add in cubed cream cheese and drained Rotel. Place the lid on and cook over low heat, stirring occasionally to incorporate the cream cheese. She just leaves to slow cooker on low and lets people dip straight out of it so that the dip stays warm.
